Ingredients

  • 2 cups of spinach
  • 1/2 cup of cheddar cheese
  • 2 cups of all-purpose flour
  • 1 cup of milk
  • 2 eggs
  • 1/2 teaspoon of smoked paprika

Steps

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, mix together the flour, baking powder, and smoked paprika.

  • 1 cup of cooked quinoa

  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 4 large whole wheat wraps
  • 1 cup of hummus

Steps

  1. In a large bowl, mix together the cooked quinoa, cucumber, tomatoes, and parsley.
  2. Drizzle over the lemon juice and olive oil, then season with salt and pepper to taste.
  3. Spread each wrap with a generous layer of hummus, then pile on the tabbouleh. Roll up the wraps, cut in half, and enjoy!

Let’s not forget the sides — simple, yet satisfying roasted broccoli and rich, creamy mashed sweet potatoes.

Ingredients

  • 2 chicken breasts
  • 1/2 cup of bread crumbs
  • 1/2 cup of grated Parmesan cheese
  • 2 cups of broccoli florets
  • 1 cup of sweet potatoes
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 teaspoon of oregano
  • 1 teaspoon of thyme

Steps

  1. Preheat your oven to 400°F (200°C) and grease a baking sheet.

  6. Mash the sweet potatoes, adding a little butter for a creamy finish, and season with salt and pepper.
  7. Serve the baked chicken with a side of the mashed sweet potatoes and steamed broccoli.
